Mixed Fried Rice |

Ingredients:
3 heaped tsp Bidco Gold Band margarine
2 medium onions, peeled and finely chopped into cubes
1cup carrots peeled and chopped into cubes
1cup peas
3 large potatoes peeled and chopped into quarters
2 cups long grain rice
6 cups vegetable stock
2 tbsp fresh lemon juice
1bay leaf
½ tsp salt
¼ tsp pepper
1level tsp curry powder
Optional
2 boiled eggs
2 tablespoon finely chopped parsley |
Method:
- In a medium sized sufuria, melt 2 teaspoons of margarine over moderate heat.
- Add onions and sauté, stirring occasionally until golden brown.
- Add peas and cover for 5 minutes.
- Add carrots and potatoes and cover for another 5 minutes stirring occasionally.
- Add the salt, pepper and curry powder.
- Add the rice and cook, stirring for at least 2 minutes.
- Add the stock, lemon juice, bay leaf and bring to boil. Lower the heat and simmer until all the vegetables and the rice are tender.
- Remove and discard the bay leaf. Before removing the rice from fire, spread the remaining teaspoon of Gold band margarine on the rice and let it melt for 2 minutes, to enhance flavor.

Serving:
Decorate each serving with slices of boiled eggs and finely chopped parsley.
The rice can be taken as a whole meal and is also a perfect complement for any gravy or stew. |
